Fish Curry - for dummies

I mean...for those (including yours truly) who dont know how to cook complicated dish such as curry from a scratch, well...fear not as there is always a way to do it. The easy way...the dummy way :-P

Today i tried this instant Curry Paste for Fish by Chillies Brand. Nothing personal about the brand, in fact, i chose it because it was the only instant spices available for fish dish at the supermarket in my neighbourhood. It said it does not contain preservatives, transfat etc etc. well, i think almost all commercial products claimed similar so called healthier choice. Anyways....

As usual i added some ingredients such as galangal, lemongrass, lime leaves, salam leaves. No curry leaves, i forgot to buy it :-(

Add some eggplants, and tomatoes (i forgot to add this though!), and some coconut milk. It was done in a jiffy!

The based paste was rather too salty to my liking. Thank goodness i did not dump all the paste into the wok! I had to add extra sugar till it tastes nice, my standard :)

Okay...i will report other findings in the future!
